Rosé evokes scenes of sunny days relaxing on the patio. Yes, summer is the most common season for drinking our favorite wine – our Brut Rosé – but we rally around the idea that rosé goes with every season. We’ve even seen a number of recent publications validating our point.

We crafted our Brut Rosé to brighten up any day of the year. It’s an antidote to cabin fever during the late winter. A dose of color on a rainy spring day. The internal A/C you want in the summer. And the rebuttal to back-to-school chaos in the fall.

Our Process

Sparkling wines are the most technically advanced of all wines. We use the traditional Champagne method, which produces the longest-lasting bubbles.

First, we harvest the Chardonnay and Pinot Noir grapes earlier than typical still wine to capture a slightly tart base. Then, we add sugars and yeast to produce carbon dioxide. The fermentation process follows to give the wine body and richness. During this stage, we rotate the bottles upside down to collect the yeast (called the lees) in the bottleneck. After fermentation, we remove the yeast by placing it in a frozen brine, a process called disgorging. From there, we add a bit more sugar to balance the acidic base and cork the bottle. And voilà! Our Brut Rosé is composed in the same bottle you purchase.

The result is a perfectly balanced, not-too-sweet sparkling rosé with a polished bubbly finish. This balance gives our Brut Rosé the versatility to pair with a number of food dishes in any season.

Seasonal Pairings

That said, we wanted to give you a few seasonal food pairings that bring out this wine’s natural cherry and strawberry flavors.

Winter – Sweet and spicy Asian beef stew with your favorite veggies. The light and crisp texture of the rosé harmonizes well with the spicy and pungent flavors.

Spring – Grilled lamb chops with cherry balsamic sauce and lemony asparagus. The sweetness of this dish brings out the bright, fruity flavors of our rosé and the bubbly finish is the perfect palate cleanser.

Summer – A curated selection of cheeses, charcuterie, rustic crackers, fresh and dried fruit, salted rosemary cashews, Marcona almonds and grilled vegetables with sriracha mayo. The bubbly mouthfeel and hints of sweetness counter the savory assortment.

Fall – Buttermilk roast chicken with a green salad. The rosé balances out the richness of the chicken and pairs perfectly with the simple salad.
